I know that I comes with old age sometimes sooner then others but I was wondering what exactly goes on internally.

Hair is coloured by specialised bodies called melanocytes. They carry the pigment melanin. The more melanocytes there are, the darker the hairs will be. When the melanocytes get older, they cannot carry as much melanin, meaning the hairs become lighter in colour. This usually results in a mix of colour, the natural white of the hair protein and the dark melanin. These colours mix optically to create grey.
When the melanocytes lose their activity, the hairs will turn white.
